A scientific study by the pharmaceutical division of the University of Athens in cooperation with the World Olive Center has shown that the olives of my supplier, Sakellaropoulos Organic Farming, have the highest percentages of tyrosol and hydroxytyrosol, in relation to all other commercial types of table olives that have been analyzed from 2005 to date, worldwide.
Tyrosol and hydroxytyrosol are substances which have antioxidant and cardio protective properties.
